Core Calculation Methods

The calculator uses three different cooking methods depending on the cut of meat:

1. Time Per Pound (Roasts & Whole Cuts)

Total Cook Time = Weight (lbs) × Cook Time Factor

Used for large cuts like beef roasts, whole chicken, and pork loins where the mass determines cooking duration.

Example: A 5lb beef roast at medium doneness (factor 20):

  • Cook time = 5 × 20 = 100 minutes

2. Time Per Inch (Fillets & Breasts)

Total Cook Time = Thickness (inches) × Cook Time Factor

Used for uniform-thickness cuts like chicken breasts and fish fillets where heat penetration depth is the primary variable.

Example: A 1.5-inch chicken breast (factor 8):

  • Cook time = 1.5 × 8 = 12 minutes

3. Time Per Side (Steaks & Chops)

Total Cook Time = Cook Time Factor × 2 × Thickness (inches)

Used for items cooked by flipping, where each side receives direct heat. The factor represents minutes per side.

Example: A 1-inch steak at medium-rare (factor 4 per side):

  • Cook time = 4 × 2 × 1 = 8 minutes total

Altitude Adjustment Formula

Cooking times increase at higher altitudes due to lower atmospheric pressure and reduced boiling points.

Altitude Adjustment = Cook Time × ((Altitude - 2000) ÷ 1000 × 5%)
  • Adjustment applies above 2,000 feet
  • Time increases by 5% per 1,000 feet above threshold

Rest Time

Resting allows juices to redistribute throughout the meat. The calculator includes built-in rest times:

  • Steaks/Chops: 5 minutes
  • Roasts: 15-20 minutes
  • Whole Chicken: 15 minutes
  • Fish Fillets: 0 minutes (serve immediately)
